Simple Mills launches sandwich cookie made with nut flour, butter

Simple Mills is shaking up the cookie aisle with its new Nut Butter Stuffed Sandwich Cookies.

Available in creamy peanut butter and cocoa cashew crème, the cookies are made with such ingredients as nut flour and nut butter, as well as dense cashew flour, cashew butter, organic coconut sugar and organic buckwheat flour, the Chicago-based brand said.

The creamy peanut butter cookies, which contain cashew and peanut flour, is stuffed with real roasted peanut butter. While the cocoa cashew crème cookies are a new take on the classic chocolate and vanilla sandwich cookie, with a slightly nutty finish and subtle vanilla flavor of cashew butter.
